Sodium benzoate is the sodium salt of benzoic acid, widely used as a food preservative (with an E number of E211) and a pickling agent. It appears as a white crystalline chemical with the formula C6H5COONa. Sodium benzoate is a preservative added to some sodas, packaged foods, and personal care products to prolong shelf life. Some people claim that this man-made additive is harmless, while others link it to cancer and other health problems. This article provides a detailed overview of sodium benzoate, including its uses and possible safety concerns. Sodium benzoate is best known as a preservative used in processed foods and beverages to extend shelf life. It’s an odorless, crystalline powder made by combining benzoic acid and sodium hydroxide. Benzoic acid is a good preservative on its own and combining it with sodium hydroxide helps it dissolve in products. Sodium benzoate does not occur naturally, but benzoic acid is found in many plants, including cinnamon, cloves, tomatoes, berries, etc. Additionally, certain bacteria produce benzoic acid when fermenting dairy products like yogurt. Sodium Benzoate is used as a preservative to prevent food from molding. It helps keep our products shelf-stable for at least two years from the date of purchase and is used in concentrations of less than 0.5% by volume. While sodium benzoate is considered safe, scientists have shown that negative side effects occur when it's mixed with ascorbic acid (vitamin C). Their studies indicate that it then turns into benzene, a known carcinogen that may cause cancer.

Liquid Glucose or Corn Syrup is a purified aqueous solution of nutritive saccharides obtained from starch or aqueous solution of nutritive saccharide obtained by starch hydrolysis, by using Corn and Rice as raw material, which is purified and concentrated to required solids. It is usually odourless and clear yellow coloured viscous liquid sweet syrup which is processed and stored under hygienic conditions. It has wide application and is particularly useful where high concentrations of invert sugars are required. It also has such advantages as anti-crystalline, a lower freezing point and high degree of sweetening power relative to sucrose. Liquid Glucose, Glucose syrup and Corn syrups are synonyms. Liquid Glucose is one of the popular food additives and ingredients in most countries. Corn Syrup or liquid glucose is made from high-quality corn starch by subjecting starch to high temperature in the presence of acids under strict quality control. A series of two enzymatic reactions are used to convert the corn-starch to corn syrup. Its major uses in commercially prepared foods are as a thickener and sweetener. It has moisture-retaining (humectant) properties, which keep foods moist and help to maintain freshness.

Sorbitol less commonly known as glucitol, is a sugar alcohol with a sweet taste which the human body metabolizes slowly. It can be obtained by reduction of glucose, which changes the converted aldehyde group (−CHO) to a primary alcohol group (−CH2OH). Most sorbitol is made from potato starch, but it is also found in nature, for example in apples, pears, peaches, and prunes.[3] It is converted to fructose by sorbitol-6-phosphate 2-dehydrogenase. Sorbitol is an isomer of mannitol, another sugar alcohol; the two differ only in the orientation of the hydroxyl group on carbon 2.[4] While similar, the two sugar alcohols have very different sources in nature, melting points, and uses. As an over-the-counter drug, sorbitol is used as a laxative to treat constipation. Sorbitol, a polyol (sugar alcohol), is a bulk sweetener found in numerous food products. In addition to providing sweetness, it is an excellent humectant and texturizing agent. Sorbitol is about 60 percent as sweet as sucrose with one-third fewer calories. It has a smooth mouthfeel with a sweet, cool and pleasant taste. It is non-cariogenic and may be useful to people with diabetes. Sorbitol has been safely used in processed foods for almost half a century. It is also used in other products, such as pharmaceuticals and cosmetics.

In sugar free ice cream, it is usually used to provide sweetness, impart body and texture.
In Diabetic fruit jam and peanut butter, sorbitol is used as a humectant to reduce dryness and improve spreadability.
Textile and Leather Application: Sorbitol is usually used as a dispensing agent, humectant/bodying agent, and sequestering agent. It is used as a colour stabilizer in textile printing, as a humectant in textile sizing, and as a softener in finishing.
Emulsion Products: Sorbitol retards the loss of water by evaporation from oil in oil/water emulsions.
Tobacco Industry: Sorbitol is used to contribute to the flavour of chewing tobacco and used as humectant and conditioner
Adhesives Applications: The characteristics of sorbitol that it neither loses nor absorbs any appreciable quantity of water increases the viscosity of the glue’s composition, and its non-volatility are an advantage in adhesive applications.
Pharmaceuticals Industry: As a good humectant and plasticizer sorbitol is usually used in emulsion ointments and in gelatine capsules. It is also finding uses in pharmaceutical syrups where it’s stability, non-cariogenicity and viscosity are an advantage. Sorbitol is also used medically in culture mediums to distinguish between various strains of bacteria such as E coli.
Other Industries: Sorbitol is used to make polyurethane foams with specific strength and absorbency which finds uses in, for instance, vehicle dashboards. It is also used as a chelator in metal working and is used in processes to anodize aluminum

Corn starch, maize starch, or cornflour A very fine, white or slightly yellowish powder or irregular white masses which are readily reducible to powder, creaks when pressed between the fingers, odorless and tasteless. Maize Starch exhibits all the properties of native starch with some special features such as non-foaming & non-thinning characteristics of boiling solution. Hence maize starch has a marginal effect on the efficiency in weaving and paper industry. Where high viscosity starch is used, it imparts higher tensile strength to the fiber and thus improves the sizing. It is the starch derived from corn (maize) grain. The starch is obtained from the endosperm of the kernel. Corn starch is a common food ingredient, often used to thicken sauces or soups, and to make corn syrup and other sugars.[3] Corn starch is versatile, easily modified, and finds many uses in industry such as adhesives, in paper products, as an anti-sticking agent, and textile manufacturing.[4] It has medical uses as well, such as to supply glucose for people with glycogen storage disease. Like many products in dust form, it can be hazardous in large quantities due to its flammability—see dust explosion. When mixed with a fluid, corn starch can rearrange itself into a non-Newtonian fluid. For example, adding water transforms corn starch into a material commonly known as oobleck while adding oil transforms corn starch into an electrorheological (ER) fluid. The concept can be explained through the mixture termed "cornflour slime".

Pectin is a natural and commercially produced essential ingredient in preserves, like jellies and jams. Without pectin, jellies and jams won't gel. Pectin is a type of starch, called a heteropolysaccharide, that occurs naturally in the cell walls of fruits and vegetables and gives them structure. When combined with sugar and acid, it is what makes jams and jellies develop a semisolid texture when they cool. Some fruits, like apples and quince, and the rinds, seeds, and membranes of citrus are naturally very high in pectin. Commercial pectins are usually made from citrus rinds. It is sold as a dry powder and in liquid form and can be expensive. Pectin is a soluble fiber (polysaccharide) found in fruits. It is used as a thickener in cooking and baking. It is also sometimes used to make medicine. Pectin binds substances in the intestines and adds bulk to the stools. It might also reduce how much cholesterol the body absorbs from foods. People use pectin for high cholesterol, prediabetes, heartburn, diarrhea, and many other conditions, but there is no good scientific evidence to support these uses.
Name: Pectin
Chemical formula: C6H10O7
Chemical Name: pectic polysaccharides
Other names: beta-D-galacturonic acid (2S,3R,4S,5R,6R)-3,4,5,6-tetrahydroxyoxane-2-carboxylic acid
Molar mass: 194.14 g/mol

Its application is diverse and covers fruit-based products, dairy products, acidified milk drinks, as well as other.
Beverages, confectionery, bakery products, a variety of fine foods, and spreads.
In addition, it finds use in the pharmaceutical industry.
Finally, increasing consumer awareness of healthy lifestyle habits and the emerging trend to produce functional foods increases the importance of the status of pectin as a water-soluble dietary fiber.
Pectin is primarily used in food production and home cooking as a thickener.
It’s added to commercially produced and homemade jams, jellies, and preserves. It may likewise be added to flavoured milk and drinkable yogurt as a stabilizer.
For home kitchen use, pectin is sold as a white or light-brown powder or a colorless liquid.
Pectin is also used as a soluble fiber supplement, which is often sold in capsule form. Soluble fiber may help relieve constipation, lower cholesterol and triglyceride levels, improve blood sugars, and promote a healthy weight

Acetic acid systematically named ethanoic acid is an acidic, colourless liquid and organic compound with the chemical formula CH3COOH (also written as CH3CO2H, C2H4O2, or HC2H3O2). Vinegar is at least 4% acetic acid by volume, making acetic acid the main component of vinegar apart from water and other trace elements. Acetic acid is an organic compound with the formula CH3COOH. It is a carboxylic acid consisting of a methyl group that is attached to a carboxyl functional group. The systematic IUPAC name of acetic acid is ethanoic acid and its chemical formula can also be written as C2H4O2. Vinegar is a solution of acetic acid in water and contains between 5% to 20% ethanoic acid by volume. The pungent smell and the sour taste is characteristic of the acetic acid present in it. An undiluted solution of acetic acid is commonly referred to as glacial acetic acid. It forms crystals which appear like ice at temperatures below 16.6oC. It has a wide range of applications as a polar, protic solvent. In the field of analytical chemistry, glacial acetic acid is widely used in order to estimate substances that are weakly alkaline.

Benzoic acid appears as a white crystalline solid. Slightly soluble in water. The primary hazard is the potential for environmental damage if released. Immediate steps should be taken to limit spread to the environment. Used to make other chemicals, as a food preservative, and for other uses. It is simplest aromatic carboxylic acid. Benzoic acid occurs naturally free and bound as benzoic acid esters in many plant and animal species. It can be synthesized by the cobalt or manganese catalysed atmospheric oxidation of toluene. Recently, benzoic acid has been prepared from toluene by employing TiO2 nanotubes electrode. Benzoic acid reacts with hydrogenating reagents to afford hexahydro benzoic acid. The thermal decomposition of the product in the presence of lime or alkali produces benzene and carbon dioxide Benzoic acid is produced commercially by partial oxidation of toluene with oxygen. The process is catalysed by cobalt or manganese naphthenates.
